If there's one fish that makes chefs go weak at the knees, it's turbot. Often called the king of flat fish, it's been the centrepiece of fine dining kitchens for centuries — and for very good reason. The flesh is firm, pearly white, and has a clean, sweet, almost nutty flavour that's in a league of its own. Once you've tasted it, you'll understand the fuss.

Our whole turbot weighs 1–1.4kg — a perfect size for roasting whole and sharing at the table. There's something genuinely special about bringing a whole turbot to a dinner party. It's a showstopper. The kind of dish people remember.

Why cook turbot whole?

Cooking turbot on the bone is the best way to eat it. The bones and skin protect the delicate flesh during cooking, keeping it incredibly moist and flavourful. The result is a texture that's almost meaty — firm enough to hold its shape, but silky and succulent with every bite.

How to cook whole turbot

Oven-roasted (the classic): Score the dark skin lightly, season generously with sea salt and pepper, and lay it in a roasting tin. Add a generous knob of butter, a splash of white wine, and a few lemon slices. Roast at 200°C for 20–25 minutes (for a 1–1.4kg fish). The flesh should pull away from the bone easily when done.

Pan-roasted fillets: If you'd prefer to fillet it first (or ask us to do it), pan-fry the fillets skin-side down in foaming butter for 3–4 minutes until golden and crisp, then flip for a final minute. Finish with a squeeze of lemon.

Grilled whole: Brush with olive oil, season well, and grill under a high heat for about 8–10 minutes per side. The skin crisps up beautifully.

What to serve with turbot

Turbot has a refined, delicate flavour — so keep accompaniments simple and let the fish shine:

Brown butter, capers, and lemon — the classic French treatment
Crushed new potatoes with chives
Wilted spinach or samphire
A light beurre blanc or hollandaise
