How to cook tuna steaks (without ruining them)
Tuna is best served rare to medium-rare. Overcook it and it can dry out, so keep it quick and confident.
Pan-sear (best method):
Pat dry, season with salt and pepper
Get the pan smoking hot with a little oil
Sear 45–90 seconds per side (depending on thickness)
Rest for a minute, then slice
How to serve it
Sesame-crusted tuna with soy + lime
Poke bowls with rice, avocado, cucumber, spring onion
Niçoise salad with eggs, olives, green beans and new potatoes
Thinly sliced with ponzu, chilli and coriander for a simple starter
