Our English rainbow trout comes whole at 400–600g — perfect for roasting, grilling, or pan-frying. The flesh is delicate and slightly sweet, with a lovely clean finish that works with everything from simple lemon-and-herb to bolder flavours like chilli, garlic and ginger.

How to cook whole trout (simple + foolproof)
Oven-roast (my go-to):
Score the skin, season inside and out, then stuff with lemon slices + herbs (parsley/dill/thyme). Dot with butter, drizzle with oil and roast at 200°C for 18–22 minutes (depending on size) until the flesh flakes easily.
Pan-fry (crispy skin):
Pat dry, season well, then fry in a hot pan with a little oil and butter. Finish with lemon and capers, or a quick brown-butter sauce.
