The trout is farmed close to the Diplomats cannery in Latvia and hand-filleted whilst fresh. It's then canned using 100% artisanal methods at their state-of-the-art cannery on the shore of the Gulf of Riga — a family business with a history stretching back to 1907.
How to serve:
- Smashed on toast with diced cucumber and sliced shallot — the texture is perfect for it
- Flaked into a warm lentil salad with the spicy oil drizzled over
- On crackers with cream cheese and fresh chives for an elegant snack
About Diplomats: One of Latvia's most celebrated tinned fish brands, founded in 1907 and still using 100% artisanal methods. Their Latvian cannery in the seaside village of Engure produces some of the finest smoked and preserved fish in Northern Europe.
