The trout is farmed close to the Diplomats cannery in Latvia and hand-filleted whilst fresh. It's then canned using 100% artisanal methods at their state-of-the-art cannery on the shore of the Gulf of Riga — a family business with a history stretching back to 1907.

How to serve:

• Smashed on toast with diced cucumber and sliced shallot — the texture is perfect for it
• Flaked into a warm lentil salad with the spicy oil drizzled over
