How to cook halibut loin (don’t overthink it)
Halibut is lean, so the trick is gentle cooking and a little moisture.
Pan-fry + finish in the oven (best for thickness):
Sear in a hot pan with oil/butter for 2–3 minutes per side, then finish in the oven at 200°C for 6–10 minutes (depending on thickness).
Oven-bake (simple + reliable):
Bake at 200°C for 12–15 minutes with lemon, herbs, a drizzle of olive oil and a splash of white wine or stock.

Halibut loves a beurre blanc, caper butter, creamy leeks, or a light tomato + olive sauce.
