Cooking tips
Pan-fry: season, lightly dust with flour, then fry in a hot pan with butter/oil for 2–3 mins per side  
Oven-bake: 180°C for around 10–12 mins (depending on thickness)  
Top tip: don’t overcook — plaice is best just cooked through and still juicy
