Bahia paella rice, from Valencia. A short grain rice used widely throughout Spain for paellas, it doubles in size when cooked, absorbing a lot of flavour. It comes in an attractive cotton sac which helps keep the rice protected and dry.

If you want to make the perfect paella for 4 people, you will need the following ingredients. First, you will need 400 grams of rice, a type of short-grain rice that is commonly used in paella. You will also need 600 grams of mixed seafood, such as prawns, mussels, and squid and white fish  In addition, you will need 200 grams of chicken, 200 grams of chorizo, and 200 grams of vegetables, such as bell peppers, peas, and onions.

To prepare the paella, start by heating 50 grams of olive oil in a large paella pan. Add the chicken and chorizo and cook until they are browned. Then, add the vegetables and cook until they are softened. Add the rice and stir until it is well coated with the oil.

Next, add 1 litre of fish  stock and bring the mixture to a boil. Reduce the heat and let the paella simmer for about 20 minutes, or until the rice is cooked and the liquid has been absorbed. Add the seafood and cook for an additional 5 minutes, or until the seafood is cooked through.

Once the paella is ready, let it rest for a few minutes before serving. Garnish with some fresh parsley and a squeeze of lemon juice. Enjoy your perfect paella for 4!
